Replaced Plugs and O2's engine light still coming on about half tank of gas, burning high octan not sure what else to do. 2012 Jeep JK

First, stop running high octane fuel. The engine in your Wrangler gets zero benefit from doing so, unless you have done a LOT of modifying.
Now spend the money you save by running the appropriate gas on new catalytic converters.

You can reset virtually any ECU by disconnecting the battery, turning the key to run, without starting the engine (which wouldn't start even if you tried...). This is often abbreviated as KOEO for Key On Engine Off. Wait about 15 minutes, then hook everything back up.

You can also generally do the same thing by pulling the fuse to the ECU instead of disconnecting the battery.

What would be a good aftermarket Catalytic Converts?
There are literally a hundred options. If you want to stick with OEM, then pretty much any parts store in the country.
There are two things I think are near universally true though. Stock sucks, and a chance to fix is a chance to upgrade.
Magnaflow, SLP, Flowmaster... pretty much all the major players in the aftermarket exhaust world make high flow cats. I don't think you can go wrong with any of them.
I still have the OEM cats on the Jeeps. The Vette has a pair from Random Technologies.
I don't know the vehicle inspection rules where you live, but do be aware that it is illegal to change the number or location of the cats, which may impact your options.

But when I put the high flow cats on my downstream O2's didn't like them so I had to get O2 foolers, now no more CEL.
