I have a 2015 Wrangler Sport JKU. I know that most wiring harnesses are the same regardless of the add-ons/ options that are available to that model. What are some of the upgrades/ add-ons/ options that might be worth getting?

That's not entirely accurate. The base harness is generally the same, but the TIPM, engine, and accessory harnesses that plug into the harness chain can vary greatly.
A better question is "what are you trying to add?"...
