Trails in/around Zion - can anyone make recommendations?

Wife & I are heading to Zion at the end of the month. We'll be camping at Watchman campground near Springdale.
Aside from the hiking that we plan to do, we also want to get the Jeep off the beaten path.
If anyone can make trail recommendations, or where NOT to bother, I'm all ears.
I already found Sand Hollow Trails, just south of the reservoir.

The only other trail I have done in the area was Toqueville Falls / Rattle Snake Gulch. The road to Toquerville is mild and the falls themselves are nice, nothing over the top spectacular. Continuing pass the Falls is Rattle Snake Gulch, a tough trail, 6-7 range, with 40+ river crossings. By far my favorite that we did in the area. Its long and difficult, not a place to go solo.
Toquerville can be done solo no issue.
