Just upgraded to falcon shocks and noticed the front shocks have an offset stud. It also has a metal hook/hanger on the top. What is the offset studs purpose? It seems to put the shock at an angle unless I turn it around label inwards towards the frame.

You must be talking about the piggyback ones? There's an alignment tab that sets into the coil bucket, it aligns the shock in the bucket.

Pcoplin is right about the tab. There is a slight angle that moves the bigger shock body away from the frame so that when you are flexing through an obstacle less chance of the shock body binding against the frame. Companies also sell lower shock relocation brackets that move the lower mount towards your tire and away from the frame.
