I noticed on our jku that there are no switches in the door jams for interior lights. They do go off after about 5 minutes if the doors aren’t closed. So does this mean I don’t have to do anything when we remove the doors for the interior lights?

Correct, you can remove the doors and you're good to go. No need to remove fuses or anything like you do with the TJ. It's nice Jeep finally addressed this!
