35's tires with 15 inch wheels stick out too much

The "normal" wheel for 35's has 4.25 or 4.5" of backspacing. You may find that 15" wheels hit your brake rotors if you move them inboard.

I just looked thru my owners manual. Everything listed with a 3.21 has 2000lb towing limit including a JKU Sport. 3.73/4.10 are 3500lbs.

Adding more water and burping wouldn't have made it do that, your problem sounds like head gaskets. Probably why it was overheating.

Great. And then test the coolant for combustion products to rule out things like a blown head gasket. The eyeball tests don't do that.
