Overheating issue

Have a 2014 JKU and fan started running a lot. Noticed slight over heating issue at idle and with stop and go driving. Needle never went past 3/4. Less when on highways. Went down to normal 1/2 way mark with running heat. After reading other threads I replaced thermostat and drained system cleaned out old fluid and added new recommended coolant. Everything was fine and back to normal for about a week. Noticed today fan running again with slight rise in temp gauge. Turned on heat and gauge back to normal. Any suggestions on next step? Thanks
 
Posted this thread at work. Planned on burping it when I got home. Fluid levels were good at work. Drove 25 mins all highway and had no issue. Pulling onto my street got the hot oil flashing under the odometer and the chimes. This is snow balling fast. Going to let it cool off and then burp the system and keep my fingers crossed. I’ll post the outcome. Or take any further advice.
 
Just to share my experience, I have gurgling sound after use on mine and have the unstable temp like yours.

The first time I burped mine in the driveway it didn't work as I hope to be.

So I top off the reservoir (full) went off-road and intentionally stopped / parked on stiff climbs, rev the engine on and off, repeat the process and tried it on different awkward angle positions.

I came home happy - no more gurgling sound and there were lots of coolant spill underneath suspension.

There must be a bit of air pocket in the cooling system.
I’d say a little more then a bit. Got home last night put it up on ramps with rad cap open. Came out this morning and had to add a little more then another gallon of fluid. Let it run til the thermostat opened and had the heat running inside and burped it again. Took almost another half gallon. The dealer gave me 4 gallons and after changing the thermostat and only using 2 1/2 gallons thought maybe they sold me more then I needed. I’ll post if this fixed it. 🤞🏼
