I'm have a 3" Teraflex lift and I'm looking to change the wheels.
I'm look at a set of 17x9's with a 0 offset and a 5" backspace. I'll be running 35x12.5 RT's

Will this have any rubbing or issues?? I will eventually be running skinny 37's so I also want to make sure it will be enough for later as well
 
You will likely be OK with the 35's, but you'd be better off with 4.25"-4.5" backspacing. You're probably going to rub some with 37's.
What differential gears do you have? The non-Rubicons typically have 3.23 or 3.73 gears. If you don't regear, the Jeep will be annoying with 35's and a total slug with 37".
The Rubicon got 4.10 gears. Which is marginal for 35's, and inadequate with 37".

I appreciate that! I currently have 35's now but I hate the mall crawler 20" rims that came on it 🤣. After doing some math, it's looks like I already have 4:88 gears so I should be good there. I don't plan on going 37s until I upgrade the front axle to a 44.

I run 35x18x12.5 with uplift no issues except the tires mounted weigh a ton.
I keep a spare on an external mount and swing away to relieve pressure on the body and door. You only need the spare once off loading and I did, made me a believer.
