Oil cooler / overheating

2015 Sport Unlimited w/ 105,XXX miles.

I started having minor overheating issues. Someone showed me where the oil cooler appeared to have started leaking, so I replaced it. In the process, I also replaced the 2 knock sensors, all 6 spark plugs, and the thermostat/housing. After I had everything put back together, I tried driving it to make sure everything was good. I don't know if I didn't have the correct amount of coolant in the radiator or not but as I was driving, the heat would come and go but the temperature gauge needle stayed halfway between cold and hot. I didn't know if the thermostat was defective or not, so I removed the new one and reinstalled the old thermostat/housing. After which, I tried driving and it started overheating so I burped the system and after letting it sit while cranked, the heat worked fine and the temperature gauge needle once again stayed in the middle, indicating to me that everything was working properly. This morning when I left for work, the jeep got up to operating temp and the temp gauge needle started to move towards hot. I turned the heat on, and everything appeared to correct itself. I'm new to jeeps and how they act. Has anyone else had this problem after replacing an oil cooler or is this normal for a JK? Any help and suggestions are appreciated. Thanks in advance.
