So I got the po128 code so I put in a new thermostat and coolant sensor but my jeep temperature still goes up to 230. When I first got the jeep I never had this issue before. I also changed the antifreeze with new antifreeze.
 
First and most likely possibility is that you didn't burp it properly. JK's don't burp right unless the front end is elevated a fair bit. I'd run the front wheels up on a set of ramps and then burp it. If you don't have ramps, you can drive up on a high curb.
Next consideration is the fan. You need to ensure not only that your thermostat is opening, but also that the fan is triggering properly.
 
I jack the front up about a foot to burp it and the fan works. I can be driving and the digital gauge will read 215 @. 70 mph than Will steadily rise up 228 than go back down to 219-212. Is this normal and maybe I didn’t notice it.
 
Normal is 206-226, at which point the high temp fan kicks in. You need to test that function separately, because it's different to the regular temp fan.

I got a P0128 code/CEL about 3 weeks ago. Live in Ontario, Canada where it was pretty cold, for reference.
When I looked up the code I thought it said something like "engine temp too low".
First thought was belts, hoses, thermostat, anything more dire.
Checked the overflow reservoir, and it was pretty low, so I added coolant and some distilled water.
Drove it for an hour or so, and the code cleared when I cleared it with my SGII. Topped up the reservoir again.
No further problems. No idea why it might have been low. Regular use, and burn off over time?
No other performance issues, and no obvious oil slick in the rad fluid, that I could see.
It's got around 150,000kms on it and has had no other major maintenance work done, so it may be due for some.
Brakes/flex hoses, seem to be a recurring problem, although rare enough that they aren't show stoppers.
Also had an injector failure last year, that the dealership turned into an adventure in fuel spills, but all has been well since.
