One minute I have oil and the next I don’t. No leak until I pulled out of the garage and not a drop in garage and the next thing I know engine light on and oil is ALL over my driveway. What could have happened?

You'll have to get under and try and see where it might have come from.
What engine do you have?
Roughly 4,685,324 things could have happened. You'll need to start by crawling under it and looking to see where the oil is coming from. If it's splashed all over, clean it off and have someone pour a bit more in while you lie underneath it and look.
Recently change the oil?
When you removed the old oil filter, did you ensure the old rubber gasket come off with it? Putting a new oil filter with its gasket on top of another gasket is a sure way to lose 5 quarts real quick.

I didn’t realize this until I was driving down the road and the light came on so I went to auto parts store to buy oil. They ended not selling it to me because it was leaking so bad they told me to go next-door, which is a mechanic and I don’t know what he’s found out because I haven’t heard back from him yet.
Wow. The only time I've experienced something like that was when a bolt came off (internally) on a 2006 Fusion transmission. It got knocked around and quickly ventilated the case dumping all the trans fluid on my driveway.
I immediately thought of filter gasket as was mentioned above. Not prepping properly before installing the new filter could fail immediately or never fail. Possibly it just took "x" pressure cycles before yours failed.
Sounds like it is the oil cooler /filter housing. They are made of plastic and seem to have a limited lifespan. If you look on YouTube there are many videos talking about this problem and the repair. There is an aftermarket version made out of aluminum that seems to be a better choice. You are fortunate your engine did not get damaged from running while low on oil.
If you didn't have to take the whole top off the engine to do it it wouldn't be a bad job. If it's close to spark plugs time do them also because it has to be torn down that far for them.
